Grain Free Pancakes

Love living in Florida we have tons of strawberries in season right now….so strawberries everything! 

What you need, 4 eggs, 1/3c coconut flour, 1 tsp baking soda, 1 scoop protein powder (I used strawberry flavored), 1 c milk, 1 tsp vanilla extract, 1/2 c fresh strawberries diced up, & butter to grease frying pan. Stir together and enjoy!

  
 

Gluten Free Bacon Pumpkin Pancakes

Fall errrrrrrverything 🍂🍂🍂Gluten Free Pumpkin Pancakes 🎃 topped with whipped cream and bacon 🐖

Pancake Recipe: makes about 20 silver dollar pancakes.
4 eggs
1/2c 100% pumpkin purée
1/4c almond flour
1/4c coconut flour
1/2c peanut butter
1/4c honey
1.5tsp cinnamon powder
1.5tsp pumpkin pie spice powder (McCormick makes it)
1/4tsp baking soda
1tsp vanilla extract
1/4c whole milk or almond milk
Butter or ghee for frying

Toppings:
3/4c heavy whipping cream
1 teaspoon or to taste liquid stevia
Bacon

How to make:
Warm up girdle, melt butter.

Combine above ingredients. Blend till smooth. In This recipe, the pancakes are thick, but add more liquid they will thin.

While the above is cooking, cook bacon.
Next, pour heavy whipping in blender with stevia and blend. Blend till it peaks, set aside.

Pancakes cook a few minutes each side. When done add toppings. For the kiddos I add a small drizzle of maple syrup.

Breakfast Coffee

Morning rituals are important.
They give you a way to start the day on autopilot while the body tries to wake up.  My personal MUST have, morning ritual, is Fatty Coffee.  I prefer to eat breakfast later in the day, but still fuel my body with these essential heart healthy fats and caffeine.

What you need.
French Press (or some sort of other coffee maker), coffee beans, grinder, kettle.

Recipe.
This particular cup of Breakfast coffee ☕💜️  has 2 TBSP Heavy Whipping Cream, 2 TBSP MCT Oil, and 1 Scoop of Collagen (on days where I am not working out I will reduce to 1 TBSP of everything).  The nutritional break down: is 44grams of fat, 444 calories, 0 carbs, 0 protein (don’t let those numbers scare you).

What is MCT oil?
It is basically a rich source of medium chain triglycerides (MCT). They consist of 100% capric acid and caprylic acid extracted from Palm fruit. MCTs are instantly converted into energy by the liver, requiring little break down from digestive enzymes and providing long lasting nourishment.
