Grain Free & Gluten Free ‘Oreo’ cookies–minimal sugar

Call them Oreos or call them cupcakes, heck just call these delicious! I made this treat for my kiddos, during meal prep time on Sunday…..and may have taste tested one to make sure it was ‘safe’ and oh-my-gawwwwww! 😍

If you would like a treat that won’t throw your goals off track….then give these a whirl!

The cake part:
1/2 cup enjoy life choc chips (my fav)
1/4 cup full fat can of coconut milk
2 eggs
1 cup almond flour
Splash of cinnamon
1/4 teaspoon baking powder
1/2 teaspoon vanilla extract

Melt chocolate and coconut milk together in a sauce pan. While melting, froth eggs. After chocolate is melted & eggs are fluffy, blend all the ingredients together in a bowl. Pour mixture into muffin pan and bake at 350 for about 10 minutes or until toothpick comes up clean.

-when done, cool in freezer for 60 minutes.

Icing:
1/4c heavy whipping cream (I love Organic Valley…I use this one in my coffee too).
1/4c coconut oil
1 tbsp of honey (taste and see if its sweet enough….if not, add 1 more tbsp)

Blend icing ingredients together…I used hand blender…Make while cake is cooling. Remove the cake from freezer and dip them in icing. For extra pop!  Melt a few chocolate chips and splatter on top of iced cake with fork.
